Einkorn Apple Pie Recipe
A wholesome, from-scratch apple pie with warm fall spices and a tender einkorn crust.
Ingredients
For the Einkorn Pie Crust

2 ½ cups einkorn all-purpose flour

1 tsp salt

1 tbsp sugar
-
1 cup cold butter, cut into cubes

6–8 tbsp ice water (einkorn needs less water than regular flour)
For the Apple Filling
-
6–7 medium apples (Honeycrisp or Granny Smith), peeled + sliced
-
½ cup coconut sugar or regular sugar
-
2 tbsp einkorn flour (for thickening)
-
1 ½ tsp cinnamon
-
¼ tsp nutmeg
-
Pinch of salt
-
1 tbsp lemon juice
-
2 tbsp butter, cut into small pieces
Instructions
1. Make the Crust

In a bowl, mix the einkorn flour, salt, and sugar.

Work in the cold butter with a pastry cutter or your hands until it looks like coarse crumbs.

Add ice water slowly, just until the dough comes together.

Split into two disks, wrap, and refrigerate for 30 minutes.
2. Make the Filling

Toss sliced apples with sugar, cinnamon, nutmeg, lemon juice, salt, and einkorn flour.

Let it rest while you roll the dough—this releases juices and blends the flavors.
3. Assemble the Pie

Roll out the first dough disk and place it in your pie dish.

Fill with apples and dot with butter.

Roll the second disk into strips and let your child help weave a lattice top.

Add dough hearts on top (optional, but absolutely adorable).

Crimp edges and sprinkle lightly with sugar.
4. Bake

Bake at 400°F for 20 minutes, then reduce to 350°F and bake 35–40 minutes or until golden and bubbly.

Let cool for at least 1 hour so the filling can set.
